A West Indian delight, but only if you do it right

Ackee is something that came into Panamanian culture with the Afro-Antillean workers who started coming here in the middle of the 19th century to build railroads and canals and establish banana plantations. The fruit is tasty, if cooked right.

 

But beware. Unripe or over-ripe, ackee is poisonous.
