Soon to ripen into passionfruit pies?

photos by Eric Jackson

Well, you have to wait awhile for the flowers to pollinate and the fruit to grow before you can turn passionfruit --- maracuyas and Panamanians call them --- into pies and other delicacies.

The passionfruit pie, by the way, is not a Panamanian thing. The editor of The Panama News was introduced to that creation by a Japanese-Hawaiian friend in the United States some years ago. But still, you can make them just as well with the passionfruit we grow here.
