The season's coming to an end...

But there are still opportunities to break out the food dryer and preserve some mangoes.

There are many things you can do with dried mango bits.

If you have an ice cream maker, you can take a rum raisin recipe and substitute mango bits for the raisins. (Substituting apricot brandy for the rum is also quite tasty.)

You can also substitute mango bits for raisins in an oatmeal-raisin cookie recipe.

These are good when coated in chocolate or carob.

Eat them with breakfast cereal.

Put them in your trail mix.

Mix a half a cup of these with three tablespoons of rum and a tablespoon of turbinado sugar, let it sit in the fridge for an hour or so, stirring occasionally, and then use this to top a piece of cheese cake.
