Panama toll house cookies
(this being a country that produces chocolate, mangos and almonds)

Ingredients:
  • 1/2 cup shortening
  • 1/2 cup granulated sugar
  • 1/4 cup dark brown sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1 cup sifted flour
  • 3/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup slivered almonds, broken up
  • 1/2 cup dried mango bits, slightly moist

Directions:
  • Cream the shortening, eggs, sugars, vanilla until fluffy
  • Mix the other dry ingredients and then stir them into the creamed mixture
  • Blend well, so that you get a uniformly moist dough
  • Add the chocolate chips, mangos and almonds, mix so that they are uniformly distributed through the dough
  • Make drops with a tablespoon, put them at least three inches apart on an oiled cookie sheet
  • Bake at 375° for 10 to 12 minutes
  • Remove cookies from sheet, put on cooling rack
