we have scenes from the civil wedding ceremony of Chef Eric Troya
Reyes, a Panamanian who works at Ego in Panama City, and Chef Liliana
Martínez Perdomo, a Colombian who does private catering. In Panama we
do have church weddings, but as far as the government is concerned what
counts is the civil wedding that's consecrated before a judge or notary.
It turns out that at Ego, which has a number of tourists among its customers, the waiters are expected to learn English and some of them use The Panama News in their private studies. (Throughout its nearly 15-year existence, this publication has always had readers who use it for that purpose.) Those who work at upscale restaurants eat reasonably well, but work hard, usually for longer shifts than most other working people. And do you want the Troya chefs to cater your special event?
