What to do with star apples

Yes, we know --- in North America the apple growers have made the point that these fruits of Southeast Asian origin are not true apples and can't be called such, lest consumers be deceived. Supermarkets up there may call them "star fruit" or by their Spanish name, "carambolas." But everyone who grew up in the old Canal Zone recognizes these as "star apples."

The first thing to do with these particular fruit is to allow them to grow and ripen, but meanwhile you can find star apples in most of the larger Panamanian supermarkets.

These things are juicy, with edible skins. They come in delicatedly sweet and tart flavors.

Slice the tart ones crossways, so that you get little star-shaped slices, and substitute them for apples in a pie, strudel or tart recipe.

Cut the sweet ones up and toss them (skin, seeds and all) in the blender with pieces of other fruit of your choice and ice cubes, and whip them up into a cold and frothy smoothie. One recent version that your editor made included a large star apple, a kiwi fruit (peeled, of course), a banana and ice --- but the possibilities are endless.
