"Matanza" literally means
slaughter, but in rural Panamanian culture it's a big barbecue party,
which generally does start early in the morning with the slaughtering
and butchering of a steer. The occasion for this party, in the La Laja
corregimiento of Las Tablas, in Los Santos province, was a birthday.
